A vibrant and flavorful chicken salad combining tender chicken, crisp apples, sweet pineapple, grapes and celery, all tossed in a tangy lime-ginger dressing and topped with crunchy toasted almonds.

Ingredients

¾ cup mayonnaise

1⁄3 cup lowfat plain yogurt

1 tablespoon sesame seeds

1 teaspoon grated lime zest

3 tablespoons lime juice

1 tablespoon honey

2 teaspoons ground ginger

¼ teaspoon salt

4 cups cubed cooked chicken breast

2 Braeburn, Gala, or Fuji apples, cubed

1 20-oz. can pineapple tidbits, drained

½ cup halved seedless grapes

1⁄3 cup chopped celery

¼ cup sliced green onions

½ cup sliced almonds, toasted

Directions

  1. In a bowl combine mayonnaise, yogurt, sesame seeds, lime zest, lime juice, honey, ginger, and salt. Add remaining ingredients except almonds. Stir well to combine. Cover and refrigerate at least 1 hour. Just before serving, sprinkle almonds over the salad.
