A colorful and creamy tricolor pasta salad with rotini, shredded carrots, bell peppers, and onions, tossed in a sweet-and-tangy mayonnaise and condensed milk dressing, chilled to perfection.

Ingredients

1 pound tricolor rotini, cooked and drained according to package directions

2 cups shredded carrots

1 green bell pepper, seeded and diced

1⁄2 cup chopped onion

2 cups mayonnaise

1 12-ounce can sweetened condensed milk

1 cup granulated sugar

1⁄2 cup vinegar

1 teaspoon salt

1 teaspoon pepper (optional)

Directions

  1. In a large bowl combine pasta, carrots, green pepper and onion.
  2. For dressing, in a medium bowl stir together mayonnaise, condensed milk, sugar, vinegar, salt and, if desired, pepper until well blended.
  3. Add dressing to pasta mixture and mix well. Chill for at least 4 hours before serving.
