Ingredients

3 cups fresh or frozen cooked corn

4 cups cauliflower florets

4 cups cherry tomatoes, halved

1 cup thinly sliced red onion

½ cup bottled ranch or Caesar dressing

Salt, to taste

Fresh Italian parsley, for garnish, optional

Directions

  1. In a large bowl, stir together corn, cauliflower, tomatoes and red onion. Add dressing; combine well. Season to taste. Cover and refrigerate until ready to serve or overnight. If desired, garnish with parsley.
