Sweet and comforting crock pot sweet potatoes cooked with brown sugar, pineapple, and aromatic spices, finished with golden-brown marshmallows for a festive, indulgent side.
Ingredients
6 sweet potatoes, peeled and cubed
1½ cups dark brown sugar
1 8-ounce can pineapple tidbits, drained
¼ cup butter
1 teaspoon ground cloves
1 teaspoon cinnamon
½ teaspoon nutmeg
1 cup mini-marshmallows
Directions
- Place all ingredients but marshmallows in crock pot and stir until mixed. Cook on low until fork tender (approximately 6 to 7 hours).
- To serve, spoon hot sweet potatoes in ramekins and top with marshmallows. Broil until marshmallows are light brown.
