Ingredients

Crostini Toasts

French baguette

¼ cup olive oil

Garlic Crostini Toasts (20 servings)

3 medium-sized garlic cloves

4 tablespoons butter

1 baguette

Chicken Avocado Crostini (8 servings)

Juice of 1 lime

½ teaspoon chipotle chili powder

½ teaspoon salt

1 ripe avocado

8 Crostini Toasts

Chicken breast from rotisserie chicken

Fresh salsa (optional)

Fresh Tomato Crostini (20 servings)

2 medium tomatoes, seeded and diced

½ cup fresh basil, chopped

1 small red onion, chopped

¼ cup olive oil

Sea salt

Ground black pepper

Beef Tenderloin Crostini (20 servings)

1 14-ounce can cannellini beans, rinsed and drained

1 clove garlic

1 tablespoon olive oil, plus additional for brushing meat

2 tablespoons finely chopped parsley

Sea salt

Freshly cracked black pepper

1 pound beef tenderloin

Mozzarella, Tomato And Basil Crostini (10 servings)

10 Garlic Crostini Toasts

2 tomatoes, thinly sliced

8 ounces fresh mozzarella cheese, cut into ¼-inch slices

Small fresh basil leaves

Crostini Toasts
  1. Preheat broiler.
  2. Cut a French baguette into ½-inch-thick slices. Place slices in one layer on a broiler pan and brush with ¼ cup olive oil. Toast under the broiler until light brown and crisp, 1 to 2 minutes. Let cool.
Garlic Crostini Toasts
  1. Preheat oven to 400°F.
  2. Wrap 3 medium unpeeled garlic cloves in aluminum foil. Bake for 20 to 25 minutes or until softened and skins are spotty brown. Cool. Remove and discard skins.
  3. Mash garlic; combine with 4 tablespoons unsalted butter (at room temperature). Preheat broiler. Cut a French baguette into ½-inch-thick slices. Place slices in one layer on a broiler pan. Spread slices with garlic butter. Toast under the broiler until golden and crisp, 1 to 2 minutes. Let cool.
Chicken Avocado Crostini
  1. In a medium bowl, combine lime juice, chili powder and salt.
  2. Peel and seed avocado; mash avocado and stir into lime juice mixture.
  3. Remove skin from chicken and discard; thinly slice meat.
  4. Spread avocado mixture on Crostini Toasts. Top with chicken and, if desired, fresh salsa.
Fresh Tomato Crostini
  1. Preheat oven to 400°F.
  2. Combine tomatoes, basil, onion, olive oil, salt and pepper. Cover and refrigerate for at least 1 hour.
  3. Just before serving, spoon tomato mixture on Garlic Crostini Toasts.
Beef Tenderloin Crostini
  1. Place beans, garlic, olive oil and parsley in a food processor; process until smooth. Season to taste with salt and pepper.
  2. Brush beef with olive oil and sprinkle with salt and pepper.
  3. Pan-fry or grill beef to preferred doneness; thinly slice.
  4. Spread bean mixture on Crostini Toasts. Top with sliced beef. Brush with olive oil and season to taste with salt and pepper.
Mozzarella, Tomato And Basil Crostini
  1. Preheat broiler.
  2. Top each Garlic Crostini Toast with a tomato slice and a cheese slice.
  3. Broil for 1 to 2 minutes or until cheese begins to melt. Top crostini with basil leaves.
