2 tablespoons melted butter
2 tablespoons olive or canola oil
1 teaspoon grated gingerroot
Pinch of salt
6 sweet potatoes, cut lengthwise into quarters
Directions
In a small bowl combine melted butter, oil, gingerroot and salt; stir well.
Brush the sweet potatoes with oil mixture and grill on an uncovered grill over medium heat for 7 to 8 minutes or until tender. If desired, cut into bite-size pieces before serving.
