Grilled Sweet Potatoes

Juicy sweet potato quarters grilled with a buttery ginger glaze until tender and lightly caramelized. Serve as a tasty, healthy side for any occasion.

Ingredients

2 tablespoons melted butter

2 tablespoons olive or canola oil

1 teaspoon grated gingerroot

Pinch of salt

6 sweet potatoes, cut lengthwise into quarters

Directions

  1. In a small bowl combine melted butter, oil, gingerroot and salt; stir well.  
  2. Brush the sweet potatoes with oil mixture and grill on an uncovered grill over medium heat for 7 to 8 minutes or until tender. If desired, cut into bite-size pieces before serving.
