Ingredients
½ cup raspberries, plus additional for topping
½ cup sliced strawberries, plus additional for topping
2 teaspoons granulated sugar
⅔ cup plain Greek yogurt
Blueberries, halved; for topping
Shelled pistachios, for topping
Directions
In a small saucepan, combine ½ cup raspberries, ½ cup strawberries and sugar. Cook over medium heat for 2 to 3 minutes or just until juices form, stirring occasionally. Remove from heat. Slightly mash fruits, if desired. Cool for 5 minutes.
Set aside 2 tablespoons berry mixture. Divide remaining berry mixture between 2 (1-cup) glasses or jars. Top with yogurt and add reserved berry mixture. Top with additional raspberries and strawberries, blueberries and pistachios. Serve immediately or cover and refrigerate up to 2 hours.
