Mahi Mahi Kabobs

Tender mahi mahi chunks marinated in sesame dressing and grilled with pineapple and peppers for a vibrant, tropical-style kabob bursting with sweet and savory flavor.

Ingredients

1 pound mahi mahi fillet, cubed into 1-inch chunks

1 cup Asian sesame salad dressing

1 small fresh pineapple, peeled and cut into 1-inch chunks

2 medium yellow bell peppers, cut into 1-inch squares 1-inch squares

Directions

  1. Marinate mahi mahi chunks in dressing for 2 hours, covered, in refrigerator.
  2. Meanwhile, soak wooden skewers in water at least 30 minutes. Preheat grill to medium heat.
  3. Thread skewers, repeating following pattern: pineapple, yellow bell pepper, green bell pepper, mahi mahi, yellow bell pepper and green bell pepper.
  4. Grill 8 to 10 minutes or until fish flakes, turning occasionally to cook evenly.
