Total Time:
Yield:
12 servings

Ingredients

1 cup unsalted butter, softened; plus additional for greasing pan

2 cups cake flour, plus additional for flouring pan

1 recipe Chocolate Ganache

2 teaspoons baking powder

½ teaspoon salt

¾ cup granulated sugar

½ cup packed light brown sugar

2 large eggs, at room temperature

4 large egg yolks, at room temperature

⅔ cup buttermilk, at room temperature

Directions

  1. Preheat oven to 350°F. Butter and flour a 12-cup or 10-inch fluted tube pan; set aside.
  2. Prepare Chocolate Ganache as directed; set aside uncovered.
  3. In a medium bowl, whisk together 2 cups flour, baking powder and salt. In a large bowl, beat together 1 cup butter, granulated sugar and brown sugar with an electric mixer on medium for 1 minute or until light and fluffy. Add eggs and egg yolks, one at a time, beating for 30 seconds after each addition. Alternately add flour mixture and buttermilk, beating on low just until mixture is combined after each addition (do not overmix).
  4. Transfer half of the batter (about 2 cups) to a medium bowl. Fold in ½ cup Chocolate Ganache. Set aside remaining Ganache for topping.
  5. Alternately spoon chocolate and plain cake batters into prepared pan. Using a spoon, gently swirl through the two batters (do not overmix).
  6. Bake for 35 to 45 minutes or until toothpick inserted near center comes out clean. Cool completely on a wire rack.
  7. Using a thin metal spatula or knife, loosen edges of cake from pan. Remove cake from pan. Pour remaining ganache over top of cake.
