Mediterranean Chicken Bowl

A vibrant Mediterranean-inspired bowl featuring tender grilled chicken, zesty couscous, crisp veggies, and a refreshing yogurt sauce for a light yet satisfying meal.

Ingredients

¾ cup plain Greek yogurt

2 tablespoons lemon juice

2 tablespoons parsley

2 tablespoons olive oil, divided

3 cloves garlic, minced

1 teaspoon cumin

½ teaspoon salt, divided

¼ teaspoon black pepper plus ¼ teaspoon black pepper, divided

¾ teaspoon dried oregano or dill weed

½ teaspoon paprika

8 ounces boneless, skinless chicken breast, cut into 1-inch pieces

1½ cups water

⅔ cup Israeli couscous

½ teaspoon grated lemon zest

2 teaspoons lemon juice

1 medium English cucumber, cut into ribbons or slices

2 small tomatoes, cut into wedges

3 tablespoons feta crumbles

Directions

  1. For marinade mixture, in a 2-cup measuring cup or bowl, stir together yogurt, lemon juice, parsley, 1 tablespoon of the olive oil, garlic, cumin, ¼ teaspoon salt and pepper. Reserve ⅓ cup marinade for sauce; cover and refrigerate.
  2. Stir oregano and paprika into marinade mixture. Place chicken in a large resealable plastic bag. Add marinade mixture to chicken in bag; seal bag. Turn to coat chicken. Marinate in refrigerator for 1 hour, turning bag occasionally.
  3. Meanwhile, in a 2-quart saucepan, bring the water to boiling. Stir in couscous and remaining 1 tablespoon olive oil and ¼ teaspoon salt. Simmer, covered, for 8 to 10 minutes or until water is absorbed, stirring occasionally. Stir in lemon zest, lemon juice and pepper.
  4. Soak four wooden skewers in water for 30 minutes before grilling to prevent them from burning. Thread chicken pieces onto skewers, leaving at least ¼-inch between pieces. Prepare a charcoal or gas grill for direct cooking over medium-high heat. Grill chicken skewers for 12 to 15 minutes or until chicken is no longer pink (165°F), turning occasionally.
  5. To assemble, divide couscous, cucumber, tomatoes, feta cheese and reserved marinade sauce between bowls. Add two chicken skewers on top of each bowl.
