Recipe Information
Total Time:
Yield:
8 servings (6½ ounces each)
Ingredients
6½ cups water, divided
6 caffeine-free peach tea bags
¼ cup granulated cane sugar
1½ cups fresh or frozen peach slices, plus additional for garnish
1½ tablespoons dried lavender seasoning
Fresh mint, for garnish
Directions
In a medium saucepan, bring 6 cups of water to boil. Remove from heat; add tea bags. Steep tea, uncovered, for 5 to 6 minutes. Remove and discard tea bags. Transfer tea to a 2-quart pitcher; cover and refrigerate at least 2 hours or until well chilled.
Meanwhile, for peach-lavender syrup, in a medium saucepan, stir together remaining ½ cup water and sugar. Bring to boil over medium heat. Boil just until sugar is dissolved; reduce heat to medium-low. Add 1½ cups peach slices and lavender. Simmer, uncovered, for 7 to 8 minutes or until peaches are soft, stirring occasionally. Remove from heat and mash peaches with a potato masher. Cool for 20 minutes.
Strain peach-lavender mixture through a fine-mesh sieve set over a bowl. Using the back of a spoon, gently press juices from mixture. Discard peach-lavender pulp mixture. Cool syrup to room temperature.
To serve, stir syrup into tea in pitcher; add ice. Garnish with additional peach slices and fresh mint, if desired.
