Pickled-Onion And Horseradish Burgers

Juicy beef patties are grilled to perfection and served on toasted brioche buns with tangy pickled onions, zesty arugula, and a creamy horseradish mayonnaise, creating a bold and flavorful gourmet burger.

Ingredients

1 pound 80%-lean ground beef

2 tablespoons Worcestershire sauce

1 tablespoon steak-and-burger seasoning

½ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon dried oregano leaves

¼ cup olive oil mayonnaise dressing

1 tablespoon prepared horseradish

1 teaspoon red onion and herbs pickling brine,

½ teaspoon stone-ground Dijon mustard

½ cup tightly packed fresh arugula

½ teaspoon olive oil

1 tablespoon lemon zest

¼ teaspoon coarse kosher salt

¼ teaspoon coarse-ground black pepper

4 large brioche burger buns, split

½ cup Quick-Pickled Red Onions and Herbs, drained

Directions

  1. Crumble ground beef into a large bowl. Add Worcestershire sauce, steak-and-burger seasoning, garlic powder, onion powder and oregano. Combine mixture using clean hands; do not overmix. Form mixture into 4 (¾-inch-thick) patties.
  2. For horseradish sauce, in a small bowl, stir together mayonnaise dressing, horseradish, pickling brine and mustard; set aside.
  3. Preheat charcoal or gas grill for direct cooking over medium-high heat (375°F.)
  4. Meanwhile, place arugula in a medium bowl; drizzle with olive oil. Sprinkle with lemon zest, salt and pepper; toss to coat. Set aside.
  5. Grill patties for 8 to 10 minutes or until burgers reach 160°F, turning halfway through.
  6. Grill buns, cut sides down, for 30 to 60 seconds or until lightly toasted. Remove from grill.
  7. To serve, spread horseradish sauce on cut sides of buns. Place arugula mixture on bottom buns. Top with burgers, Quick-Pickled Red Onions and Herbs and bun tops.
