Pineapple-Mango Paletas

Tropical pineapple-mango paletas with a hint of mint and lime, delivering a bright, refreshing, and naturally sweet frozen treat perfect for warm days.

Ingredients

3 cups cubed fresh pineapple (about 1¼ pounds)

1 medium mango, peeled, pitted and diced (1½ cups)

½ cup pressed coconut water

2 tablespoons small mint leaves, plus additional chopped mint for garnish

1 tablespoon lime zest, plus additional for garnish

3 tablespoons fresh lime juice

Directions

  1. In a blender or food processor, place pineapple, mango, coconut water, 2 tablespoons mint leaves, 1 tablespoon lime zest and the lime juice. Cover and blend or process until smooth.
  2. Pour mixture into 10 (3-ounce) pop molds. Cover with lid.* Insert craft sticks. Freeze for 4 hours or until firm.
  3. To unmold paletas, dip molds into cool water until paletas loosen from molds. Gently remove paletas from molds and transfer to a baking sheet lined with parchment paper. Freeze at least 10 minutes or lightly cover with plastic wrap and store in freezer until ready to serve.
  4. To serve, garnish with additional chopped mint and lime zest, if desired.

*If pop molds have individual lids with attached sticks, cover molds with foil. Cut small slits in foil and insert craft sticks into each pop.
