Sweet and tender pineapple-infused sweet potatoes cooked with brown sugar, cloves, cinnamon, and nutmeg, topped with golden marshmallows for a comforting, flavorful side.
Ingredients
6 sweet potatoes, peeled and cubed
1½ cups dark brown sugar
1 8-ounce can pineapple tidbits, drained
¼ cup butter
1 teaspoon ground cloves
1 teaspoon cinnamon
½ teaspoon nutmeg
1 cup mini marshmallows
Directions
- Place all ingredients but marshmallows in slow cooker and stir until mixed. Cook on low until fork tender, 6 to 7 hours.
- To serve, spoon hot sweet potatoes in ramekins and top with marshmallows. Broil until marshmallows are light brown.
