4 cups red raspberries, plus additional for serving
For raspberry coulis, in a small saucepan, combine 4 cups raspberries, sugar and lemon juice. Simmer over medium-low heat for 8 to 10 minutes or until sugar dissolves and mixture slightly thickens, stirring occasionally.
Strain raspberry mixture through a fine-mesh sieve set over a bowl, using the back of a spoon to press the raspberries against the sieve to release their juices. Discard fruit pulp. Cool sauce before serving.
Meanwhile, prepare and bake Perfect Popovers according to recipe directions.
To serve, split open popovers lengthwise; place each on a serving dessert plate. Swirl about 1½ tablespoons raspberry coulis into sweetened whipped cream.
