Prepare and bake Perfect Popovers according to recipe directions; cool slightly.
Meanwhile, for ganache, in a small saucepan, stir together sugar, heavy whipping cream and butter; cook and whisk over medium-high heat just until mixture begins to simmer. Remove from heat; whisk in finely chopped chocolate until melted.
To serve, use a serrated knife to cut popovers crosswise in half; place each in a serving dessert bowl. Place a scoop of ice cream in the bottom portions of the popovers. Drizzle ganache over popovers and ice cream. Garnish with orange zest, if desired.
