
1 cup fresh grapefruit juice
½ cup Grapefruit-Thyme Simple Syrup, recipe right
4 cups grapefruit-flavored sparkling water
Grapefruit slices, for garnish
Fresh thyme sprigs, for garnish
In a medium saucepan, heat 1 cup granulated sugar, 1 cup water and ¼ cup fresh grapefruit juice over medium heat for 5 minutes or just until sugar is dissolved, stirring occasionally. Remove from heat. Stir in 4 large strips grapefruit peel and ¼ cup tightly packed fresh thyme sprigs. Let stand, uncovered, at room temperature for 1 hour. Store syrup in a tightly covered container in the refrigerator up to 2 weeks.
