This Spirit-Free Limoncello Spritz captures all the sunny flavor of Italy without the alcohol. Fresh lemon syrup and juice combine with effervescent sparkling water and mint for a light, refreshing mocktail ideal for brunches, garden parties, or relaxing afternoons.
Ingredients
12 lemons, plus additional thinly sliced, for garnish
1 cup granulated sugar
3 (12-ounce) cans LaCroix Limoncello sparkling water
Fresh mint, for garnish
Directions
- Peel 12 lemons. Remove pith from peels, if necessary. Juice peeled lemons. You should have about 1 cup juice; cover and refrigerate. Place peels and sugar in a 4-cup glass measuring cup; stir and muddle gently. Cover with plastic wrap; let stand at room temperature overnight or up to 2 days.
- Strain syrup mixture through a fine-mesh sieve into a clean jar or airtight container; cover and refrigerate.
- To serve, in a large pitcher, gently stir together lemon syrup, lemon juice, sparkling water and ice. Garnish with additional lemon slices and mint, if desired.
