Sweet watermelon meets peppery arugula, creamy feta, and fresh mint in this light, citrus-dressed salad that’s as beautiful as it is refreshing.

Ingredients

½ cup orange juice

½ cup lemon juice

2 tablespoons honey

1 teaspoon salt

½ teaspoon black pepper

½ cup olive oil

12 cups cubed seedless watermelon

4 cups arugula leaves

1½ cups crumbled feta cheese

¼ cup chopped fresh mint

Directions

  1. In a large bowl, whisk together orange juice, lemon juice, honey, salt and pepper. Slowly add olive oil, whisking constantly. Add watermelon, arugula, feta cheese and mint; toss gently to combine. Serve immediately.
