Apple-Walnut Bread

This Apple-Walnut Bread combines the natural sweetness of shredded apples and applesauce with warm cinnamon, nutmeg, and cloves. Serve slices with Honey-Walnut Neufchâtel Cheese Spread or drizzle with homemade caramel sauce for an indulgent twist.

Ingredients

¾ cup all-purpose flour

¾ cup whole wheat flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground cloves

¼ teaspoon salt

1 cup peeled and coarsely shredded Braeburn or Gala apples

1 tablespoon honey

½ teaspoon fresh lemon juice

1½ cups Slow-Cooker Applesauce

½ cup packed brown sugar

2 large egg whites

2 tablespoons olive oil

1½ teaspoons pure vanilla extract

½ cup chopped toasted walnuts, plus additional for garnish

Honey-Walnut Neufchâtel Cheese Spread, for serving;

Homemade Caramel Sauce, for serving

Directions

  1. Preheat oven to 350°F. Lightly spray a 9×5-inch loaf pan with nonstick cooking spray; set aside.
  2. In a medium bowl, whisk together all-purpose flour, whole wheat flour, baking soda, cinnamon, nutmeg, cloves and salt; set aside. In a small bowl, stir together shredded apple, honey and lemon juice until apple is coated; set aside.
  3. In a large bowl, beat applesauce, brown sugar, egg whites, olive oil and vanilla with an electric mixer on medium until smooth. Add flour mixture. Beat on low just until combined. Fold in ½ cup walnuts. Spread batter evenly in prepared pan.
  4. Bake for 55 to 60 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on wire rack for 10 minutes. Loosen edges of bread from pan; remove from pan. Cool completely on rack. Serve with cheese spread and caramel sauce. Garnish with additional walnuts, if desired.
