Arugula Salad With Apples And Grapes

A crisp and vibrant salad of peppery arugula, juicy grapes, and crunchy apples, dressed in a light honey-Dijon vinaigrette for the perfect sweet-tart balance.

Ingredients

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 teaspoons honey

1 small shallot, thinly sliced

Salt and black pepper, to taste

¼ cup extra-virgin olive oil

1 (5-ounce) bag arugula

1 Granny Smith apple, thinly sliced

1 cup seedless red grapes, cut in half

Directions

  1. For dressing, in a small bowl whisk together vinegar, mustard, honey, shallot and salt and pepper. Slowly add olive oil, whisking constantly.
  2. In a large bowl, toss together arugula, apple and grapes. Add dressing and gently toss to combine.
