Candied Lemon Peel

These simple candied lemon peels offer a sweet, zesty accent made by gently simmering fresh lemon strips in sugar syrup and coating them with sugar.

Ingredients

1 lemon

3 cups cool water, divided

2 cups granulated sugar, plus additional for sprinkling

Directions

  1. Use a vegetable peeler to cut thin peels from lemon; cut peels into small thin strips for garnishing cookies.
  2. In a small saucepan, combine peel strips and 1 cup water. Bring to boil; boil for 2 minutes. Drain. Repeat boiling and draining peel strips with additional 1 cup water.
  3. Return peel strips to saucepan and add remaining 1 cup water and 2 cups sugar. Bring to boil; reduce heat and simmer for 6 to 8 minutes.
  4. Use a slotted spoon to transfer peel strips from sugared water to a plate; spread in a single layer. Sprinkle peel strips with additional sugar. Let stand until set.
