Cranberry Walnut Salad

Mixed greens tossed with a smooth cranberry-balsamic vinaigrette, topped with crunchy walnuts and sweet dried cranberries for a vibrant and flavorful salad.

Ingredients

½ cup chopped red onion

1 6-ounce package dried cranberries

¼ cup balsamic vinegar

1 tablespoon granulated sugar

1 tablespoon Dijon mustard

1 teaspoon salt

½ teaspoon ground black pepper

1 cup canola oil

6 cups mixed salad greens

⅔ cup chopped walnuts

Directions

  1. For vinaigrette, combine red onion, ⅓ cup of the dried cranberries, vinegar, sugar, mustard, salt and pepper in a blender or food processor. Puree until smooth. With machine running, gradually add oil and process until smooth. Can be made ahead a day or two and stored in a jar in the refrigerator.
  2. To serve, pour desired amount of vinaigrette over salad greens and toss. (Store remaining vinaigrette in refrigerator for another use.) Sprinkle walnuts and remaining ⅔ cup cranberries on top.
