Easy Spanish Rice

A quick and savory Spanish rice, cooked with salsa and butter, then finished with fresh lime juice for a bright, flavorful accompaniment to tacos, burritos, or grilled meats.

Ingredients

1½ cups medium chunky salsa

1½ cups water

1 (6.8-ounce) package Spanish rice mix

1 tablespoon salted butter

1 tablespoon fresh lime juice

Directions

  1. In a large saucepan combine ½ cups medium chunky salsa, water and 1 package Spanish rice mix.
  2. Bring mixture to boil; reduce heat.
  3. Simmer for 20 to 25 minutes or until rice is tender and liquid is absorbed.
  4. Remove from heat and stir in 1 tablespoon salted butter and fresh lime juice.
  5. Let stand, covered, for 5 minutes. Fluff with fork before serving.
