These flatbread-, Hawaiian- and barbecue-theme recipes show just how meatballs make a meal memorable. Make several batches of classic meatballs and freeze them for quick and easy meals.
Meatballs Ingredients and Variations

Standard meatballs are made with a combination of meat, bread crumbs, eggs, onion, milk, salt and pepper. But the variations are endless and you can easily customize with ingredients like these.

Meat: Start with a meat or plant-based meat substitute. Pick from ground beef, chicken, pork, turkey or lamb—or combine two for extra flavor.

Herbs & seasonings: The many options include parsley, oregano, basil, thyme, rosemary, chili powder, smoked paprika, Italian seasoning, cumin and curry powder.

Moisture: Add moisture with worcestershire sauce, tomato juice, broth, beer, wine or vegetable puree.

Sauce: Pair with gravy; savory fruit glaze; tzatziki; or barbecue, sweet and sour, Swedish meatball or pasta sauce.

Garnish: Finish with fresh herbs, shredded cheese or sliced green onions.

1. Mix ground meat or meat substitute with ingredients. Gently combine, being careful not to overmix. Add more bread crumbs if the mixture feels too wet.

2. Use a 1-inch scoop to measure equal portions, then cup mixture in hands and roll into uniform-size balls so all meatballs cook at the same rate.

3. Add 3 to 4 tablespoons of cooking oil to a skillet. Place meatballs in skillet one at a time; do not crowd. Cook meatballs 2 to 3 minutes per side for even browning. Check doneness with a meat thermometer (160◦f for beef, pork and lamb; 165°F for poultry).

4. Drain meatballs on a plate lined with paper towels to absorb excess oil.

Tip: How to Oven-Bake Meatballs

Preheat oven to 400◦f. Line a baking sheet with foil and coat the foil with nonstick spray. Place meatballs in a single layer on prepared baking sheet. Bake for 20 minutes or until a meat thermometer inserted into center of a meatball registers 160°F (165°F for poultry).
