Light, creamy, and slightly spicy, this horseradish-fennel sauce blends whipped cream with tangy horseradish and crisp fennel for an elegant accompaniment to savory dishes.

Ingredients

⅓ cup finely chopped fennel

⅓ cup prepared horseradish

¼ cup sour cream

2 cloves garlic, minced

¼ teaspoon salt

½ cup whipping cream

Directions

  1. In a medium bowl, combine fennel, horseradish, sour cream, garlic and salt. Cover and refrigerate up to 2 hours before serving.
  2. Just before serving, place whipping cream in a chilled mixing bowl. Beat with an electric mixer on high until soft peaks form. Gently fold horseradish mixture into cream. Serve immediately.
